For the manufacture of jelliesAt the heart of the Clermont-Ferrand factory are two processes: one is done by hand, in the purest 19th-century tradition, in which fruit purée is mixed with sugar from pot to pot, cooled, dried, cubed a few days later and granulated by hand ; the other is more mechanized, while remaining particularly traditional: mechanization is very limited, and is accompanied by human hands and the know-how of the Maison's teams, enabling us to diversify flavours and shapes, with inventive moulds that appeal to young and old all year round!

The traditional recipes of Auvergne's master confectioners are used every day in our workshops, to ensure that our products are always of the highest quality. Confisage, the process of gradually replacing the water naturally contained in the fruit with sugar, is a delicate and demanding operation. The fruit is first immersed in a sugar syrup for several days; then, once candied, it is drained and covered with a fine sugar glaze.

The selection of raw materials has been an integral part of Maison Cruzilles' signature and expertise since its creation.

The fruits chosen for the production of candied fruits and jellies are carefully selected according to strict criteria. For example, candied fruits include Auvergne strawberries, Auvergne angelica, Solliès figs, Corsican clementines, and Lorraine mirabelle plums. jellies fruit purées harvested at peak ripeness jellies with purées sourced in France whenever possible.

The history of Maison Cruzilles

Heir to the long tradition of Auvergne confectioners, the history of Cruzilles began in 1880, when the company was founded from the merger of 3 great Clermont-Ferrand confectioner lines: Gauffridy, Aubert and Jean-Baptiste Cruzilles.

Confectionery appeared in Auvergne in the 15th century and developed there with remarkable speed. In the 1860s, it even became the leading industry in the Clermont-Ferrand region. Thanks to the well-exposed hillsides, the soil was ideal for growing particularly aromatic fruits. At that time, there were around twenty confectioners in the region, some of which were veritable institutions.

Founded in 1880, Cruzilles is one of the oldest French confectionery companies still in business. At a time when confectionery was booming, the company quickly distinguished itself through the quality of its products and its expertise. Today, it is the last company in Auvergne from that era to continue operating. We are proud to carry on and preserve this unique heritage.
